Serving modern Mexican fare, Agave Roja is celebrating its seventh year as a tasty part of the Corolla restaurant scene. A little more upscale than the traditional Mexican restaurant but still relaxed and casual, Agave Roja is a place to sit down and savor a meal. The interior is contemporary, with local artwork, tile, woodwork and colorful reds and oranges that lend a lively style, and the outdoor seating has been expanded to offer more room for al fresco margaritas. The menu offers Mexican fare prepared with skill and some new twists on Latino cooking, including creative starters, soups, salads, seafood dishes, enchiladas, steak, chicken, kids' meals and so much more. Lunch is casual and includes their famous taco menu, while dinner is of a slightly elevated caliber. Agave Roja has a full bar featuring more than 50 varietals of tequila, fresh-made margaritas, mojitos, sangria, signature cocktails and beer. They serve lunch and dinner seven days a week in season, and they're always having some sort of extra fun here too, with events that celebrate holidays or painting classes. New this year is a second location just a few doors down – Agave ToGo & Catering, a super-casual takeout restaurant that makes beach eats and dinners at home quick and delicious.
